The skins become "chicken chips" - I pre-heat the oven to 350 degrees, spread out the chicken skins so they are flat, and sprinkle with salt. They bake until crispy, check them after 5-10 minutes.
Once you've cut the meat from the bones, you can make chicken broth from them. I get about 5 quarts of chicken broth from the bones of 20lbs of chicken leg quarters. If you were to buy 5 quarts of chicken broth, you'd likely spend $7.50 or more!
Now you have several pounds of boneless skinless chunks of chicken. This lasts the two of us approximately 5 dinners plus leftovers for my husband's lunches. You can use this meat anywhere you'd use boneless skinless meat, here are some ideas.
- Tacos! Cut the meat finely and add taco seasoning.
- Chicken Curry! Cut meat into bite size pieces, cook, add onion, curry paste, coconut cream (I buy mine in a local Asian shop for around $2.89 per can), cauliflower. Serve over rice or just eat as-is.
- One-Pot Chipotle Bacon Chicken
- Bread and fry! Crushed pork rinds make a great breading. The "nuggets" come out super moist and delicious.
